Green Bean Salad with Peanut Dressing

Green beans are a great low calorie vegetable with numerous different vitamins. I’m not a huge salad person, but I love this green bean salad recipe. It’s extremely simple, takes less than 15 minutes, and does not involve any skill in making whatsoever. The combination of green beans and peanut butter might sound weird, but it works. The peanut dressing that we will use will make these green beans so much different from every other green bean recipe you have had.

Serves 2


  • 1 ½ -2 cups green beans
  • 1 ½ tb peanut butter
  • 1 tb soy sauce
  • 1 tb rice wine vinegar
  • ½ tbs chili garlic sauce
  • ½ tb oil
  • 1 tsp sesame oil
  • 1 tb water
  • 1 tb honey
  • Salt and pepper to taste


  • In a bowl, combine all the sauces
  • Boil the green beans in salted water for 3-5 minutes or until tender
  • Drain and toss in the dressing
  • Season with salt and pepper and serve

Chef’s notes:

  • This is a very basic baseline recipe. Feel free to make it your own. You can add nuts, such as sliced almonds or carrots for added crunch. Don’t be afraid to add more ingredients
