Breakfast nachos!!?? Lemme introduce you to chilaquiles, the Mexican breakfast classic. Tortilla chips soaked in a spicy salsa served with eggs and even more salsa!

Serves: 1


  • Large handful of tortilla chips
  • ½ cup salsa
  • ½ chipotle in adobo (optional)
  • 1 tbs peri-peri sauce
  • ¼ cup vegetable broth
  • 1 tsp olive oil
  • 2 eggs
  • Cilantro, onion, cheese, and lime to garnish


  • In a pan, simmer the salsa, broth, chipotle, and peri-peri on medium heat until slightly thickened
  • Add the tortilla chips and toss to combine
  • In a separate pan, cook the eggs in oil to your preferred doneness
  • Transfer the tortilla chips to a plate, and top with the egg and salsa!
  • Chef’s tips:
    • You can use any salsa you like. Green or red…maybe even a mole
    • Add the extra spice based on the salsa you are using
