Oatmeal Banana Nut Muffins

These muffins are a great healthy alternative to the classics.

Makes 12:


  • 4 tbs unsalted butter
  • 3 large ripe bananas
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ¼ tsp allspice
  • ¼ tsp nutmeg
  • 1 ½ tsp baking powder
  • 1 ½ – 2 cups pancake mix (I used a protein blend)
  • Handful chopped pecans, toasted
  • 12 tsp Nutella


  • Preheat the oven to 350 degrees
  • Brown the butter on medium heat until fragrant and nutty. Set aside to cool
  • In a large bowl mash the bananas
  • Whisk in the eggs and spices
  • Mix in the rest of the dry ingredients, making sure not to over whisk
  • Fold in the nuts
  • Spray muffin tin and fill ½ way with batter
  • Add a teaspoon of Nutella to the middle and cover with enough batter to go ¾ up the tray
  • Bake for 15 minutes
  • Serve while hot!
