Avocado Focaccia Sandwiches

This sandwich highlights the humble avocado in so many different ways. The texture of the crunchy focaccia and creamy avocado works perfectly. The sharpness of the onion and the sweetness of the balsamic complements the flavor beautifully. Every time my family has avocados, I love making this recipe.

Serves 4


  • 1 red onion, thinly sliced and soaked in ice water
  • 2 large heirloom tomatoes, slices and salted
  • 2 avocados, slices
  • 4 large pieces focaccia bread, halved
  • ¼ cup pesto
  • 2 tbs butter, softened
  • Olive oil, balsamic vinegar, chili flakes and seasoning to finish


  • Spread the butter on the bread and season with salt and pepper
  • Toast the focaccia on a griddle pan on medium heat until golden brown
  • Spread the bottom of the bread with pesto and layer with the veggies and avocado
  • Top with the olive oil, chili flakes and balsamic and season generously with salt and pepper
  • Top with the other half of the focaccia and serve

Chef’s tips

  • Salting the tomatoes completely changes the experience. Sprinkle a small pinch of salt over the sliced tomatoes after you slice them
  • Be generous with the seasoning. Ingredients high in fat can take a lot of salt so make sure your sandwich is seasoned properly
  • An alternate option is to reduce the vinegar in a small pot until a glaze and lightly drizzle that over the sandwich
